Wholemeal Farmhouse

Wholemeal flour is made from 100% of the wheat kernel so includes the bran and wheat germ. It is coarse-textured and full-flavoured. As the bran inhibits the release of gluten, the dough rises more slowly and loaves tend to be denser. This is different to brown flour which contains 80-90% of the wheat kernal and some bran has also been removed.
